Easy-breezy Banana-Strawberry Smoothie Bowl

The ultimate hub of my trial and error episodes.

The place I learned to blend fruit and eat it from a bowl.

My first few tries were a flop, though!

In my dorm room, I blended less-than-appetizing cafeteria bananas, and my blender left everything chunky. It turned out more like a fruity, lukewarm soup, and no one cared for it (though I forced myself to believe I did).

But alas! I took another shot at it several years later. This time with frozen bananas.

GOLDEN!!!

Hands down, my number 1 go-to breakfast. A plant-based meal winner. Cool. Velvety. Versatile. Easy-breezy. Uber nutritious. Ultra satisfying. 

This delicious recipe features some of my favorite power ingredients:

Banana

Naturally sweet, bananas are loaded with digestion-loving fiber. They’re a high source of potassium, regulate heartbeat and blood pressure, and keep your brain alert. They’re also a good source of iron, fighting anemia induced fatigue.

 

Kale

This popular green is amongst one of the most nutrient-dense foods on the planet! A single cup of kale is loaded vitamin A, vitamin K, vitamin C, vitamin B6, manganese, iron, calcium, and more. Its powerful antioxidants also counteract oxidative damage in the body, believed to cause premature aging and diseases like cancer.

Strawberry

Not only do strawberries and bananas make a beautiful combo, strawberries are an excellent source of vitamins C and K. They provide a significant amount of cancer-fighting phytonutrients and flavonoids, also responsible for their gorgeous red color.

 

Avocado

Velvety creaminess you guys! Avocados incredibly nutritious–a very smart kitchen staple. They provide an amazing amount of oleic acid, a healthy fat associated with reduced inflammation, and a healthier brain. Its healthy fat content will also keep you feeling full.

Dates

Nature’s candy! Dates are high in fiber, potassium, and contain polyphenols, an antioxidant compound that protect your body from inflammation. They’re full of vitamins and minerals, and give you tons of energy!

Flaxseed

Omega-3 powerhouse! Everyone needs omega-3. It lowers cholesterol, blood pressure, is heart-healthy, promotes healthy eyes and can reduce the likelihood of heart attack and stroke. One ounce of flaxseed contains a whopping 6,388 mg of ALA omega-3 fatty acids, exceeding the daily recommended amount!  Flax seeds please!

Easy-breezy Banana-Strawberry Smoothie Bowl

Servings: 1

Ready In: 10 mins

Good For: Breakfast, Snack

Cuisine: Vegan, Gluten-Free, Soy-Free, Raw

Ingredients:

  • 1 cup frozen banana
  • 1 cup frozen strawberries
  • ½ cup avocado
  • ¾ cup kale
  • 1 tbs nut butter (optional protein boost)
  • 1 tbs flaxseed
  • 2 dates, pitted
  • 1 cup unsweetened vanilla coconut/almond milk
  • Toppings: nuts, seeds, fresh fruit, toasted coconut flakes

 

Instructions:

  1. To a blender, first add milk. Then add frozen banana, frozen strawberries, kale, avocado, flax seed, and dates.
  2. Start blending slowly (this is the trick, so be patient!).
  3. If “stuck”, scrape the sides down, with smoothie wand or something similar  (while turned off).
  4. Slowly increase speed until everything is blended and smooth.
  5. Taste and tweak flavor as needed, adding more banana or dates for sweetness, plant-based milk to thin, or berries for stronger berry flavor.
  6. Pour into bowl and top with fresh fruit, nuts, and seeds.

Note: Tastes best when fresh.
