Veggie-full Quinoa Salad

This high-protein, veggie-full quinoa salad is easy, ultra-flavorful, and superfood-packed. My favorite way to use leftover quinoa! 


Veggie Full Quinoa Salad _ Choosing My Health _ Pre Mix

Veggie-full Quinoa Salad

Servings: 4

Ready In: 20 minutes

Good For: Lunch, Dinner

Cuisine: Gluten-Free, Oil-Free, Vegan


  • 3 cups cooked quinoa
  • 1 cup greens
  • 1/3 cup red peppers
  • 1/2 cup cucumbers 
  • 1/2 cup diced tomatoes
  • 1/4 cup green onions
  • 1/4 cup chopped dates
  • 2 tbs fresh basil
  • 2 tbs chopped nuts
  • 1 cup seasoned tempeh or tofu chunks 
  • ¾ cup Tahini Dill Salad Dressing (or salad dressing of choice)
  • Dash of cayenne
  • Salt to taste


  1. Chop veggies and place into a large mixing bowl. 
  2. Next, add cooked quinoa, tempeh/tofu chunks, salad dressing, cayenne, salt and mix well.
  3. Enjoy! 


-Prepare a big batch of quinoa at the top of the week to use in multiple dishes throughout the week.
