Loaded Sweet Potatoes

 

An effortless way to eat heartily, these loaded sweet potatoes are an easy way to satisfy your tummy and taste buds! Top with all your favorite fixings for a healthy feast!  

Loaded Sweet Potatoes 

Servings: 4

Ready In: 1 hour and 15 minutes

Good For: Lunch, Dinner 

Cuisine: Gluten-Free, Vegan

Ingredients:

  • 4 sweet potatoes 

Toppings: 

    Instructions:

    1. Preheat oven to 425 degrees and line a baking sheet with parchment paper.
    2. Use a fork to poke several holes into sweet potatoes.
    3. Bake for 40-50 until you can easily stick a butter knife or fork through the center and let cool for 10 minutes. 
    4. Slice in half, and slightly score or mash the inside of each side.  
    5. Stack on toppings and enjoy!

    NOTES:

    -Batch-bake sweet potatoes at the top of the week to use in multiple dishes throughout the week.
